12 oz  lowfat plain yogurt
0 1/2 cup  fresh cilantro
2 each  medium limes
7 each  medium garlic cloves
0 1/2 tsp  salt
2 tsp  black pepper
4 lb  boneless skinless chicken thighs
1 each  cooking spray
Directions
  1. Place the yogurt, cilantro, lime juice, garlic, salt, and pepper in a blender and process to make a marinade,
  2. Put the chicken in an extra large plastic resealable bag and pour the marinade over the chicken. Seal the bag and carefully cover the chicken with the marinade. Refrigerate for 6 to 8 hours.
  3. Once the chicken is ready to cook, Preheat the oven to 350 degrees. Coat the roasting pan with the nonstick cooking spray and put the chicken in the pan. Keep the marinade.
  4. Cook the chicken for 1 hour, or until the internal temperature reaches 180 degrees, basting with the marinade as necessary for the first 30 minutes.
