1 lb  raw medium shrimp
1 each  medium onions
0 1/2 cup  white wine
2 tbsp  fresh lemon juice
2 tbsp  olive oil
3 each  scallions
6 each  medium garlic cloves
1 tbsp  fresh ginger root
2 each  whole jalapeno pepper
0 1/4 tsp  ground coriander
0 1/4 tsp  ground cumin
0 1/4 tsp  dry mustard
3 each  fresh tomatoes
1 tsp  brown sugar
1 tbsp  red wine vinegar
Directions
  1. Place the shrimp in a bowl with the onion, wine, lemon juice, and 1 tablespoon of the oil. Marinate in refrigerator for one hour.
  2. While shrimp is marinating, heat 1 tablespoon of oil in a large skillet over medium high heat. Add the scallions, garlic, ginger, and jalapeno. Cook for 2 minutes, stirring constantly.
  3. Add the coriander, cumin, and mustard, stir and cook an additional 1 minute.
  4. Add the tomatoes and cook another 1 minute, stirring constantly. Remove from heat and add the brown sugar and vinegar. Stir, move sauce to a bowl, and let cool.
  5. Preheat broiler.
  6. Thread shrimp onto 4 skewers and broil until opaque (approximately 3 minutes). Serve the shrimp with sauce.
