1 each  medium garlic cloves
2 cup  lowfat plain yogurt
1 each  Cucumber, fresh, medium
1 tbsp  distilled white vinegar
1 1/2 tsp  fresh dill weed
0 1/4 oz  fresh mint
2 tsp  extra virgin olive oil
2 tbsp  cold water
1 oz  fresh mint
  1. Rub crushed garlic clove over the sides and bottom of a large bowl. Throw garlic away. In same bowl, mix yogurt, cucumber, vinegar, dill, mint, and olive oil. Wrap in plastic wrap and place in refrigerator for 2 hours.
  2. Remove from refrigerator and uncover. Pour water into mixture and combine. Garnish with mint sprigs if using.
