1 each  cooking spray
1 tbsp  bread crumbs
2 cup  fat free cottage cheese
1 1/2 cup  fat free shredded cheddar cheese
2 each  eggs
6 tbsp  whole wheat flour
10 oz  frozen chopped spinach
0 1/4 cup  fresh chopped green onion
2 oz  flame roasted red bell peppers, 80% cooked
0 1/4 cup  chopped parsley
0 1/2 tsp  black pepper
0.125 tsp  ground nutmeg
  1. Preheat oven to 350 degrees F.
  2. Coat the a 13 x 9 inch pan with cooking spray. Firmly press breadcrumbs onto bottom and sides of pan.
  3. Mix cottage cheese and eggs in a bowl. Add the rest of the ingredients and mix until fully combined. Spoon mixture into pan and bake in oven 35 to 40 minutes or until golden brown. Remove from oven, cool 10 minutes, and slice into 12 even squares.
