2 cup  fresh mushroom slices
1 each  large onion
3 each  medium garlic cloves
2 each  boneless skinless chicken breasts
2 tbsp  dijon mustard
2 tbsp  capers
1 tsp  balsamic vinegar
0 1/4 tsp  hot pepper sauce
2 tbsp  light mayonnaise
  1. Preheat oven to 375 degrees F.
  2. Combine mushrooms, onion, and garlic in a medium nonstick frying pan about 9 minutes or until mushrooms are slightly browned.
  3. In the mean time, wash and dry chicken. Lay chicken in a 9 by 13 inch baking dish and bake in oven for 10 minutes.
  4. Remove mushrooms from heat and add in mustard, vinegar, hot sauce, and mayonnaise, stir to combine.
  5. Spoon the mushroom/mayonnaise sauce over the chicken and keep baking for 15 to 20 minutes. Chicken should be cooked all the way through. Take out of oven and move to a serving platter.
