0.125 tsp  ground nutmeg
24 oz  orange roughy fillet
0 1/4 tsp  salt
0 1/4 tsp  black pepper
1 each  cooking spray
0.125 tsp  paprika
0 1/4 cup  white all purpose flour
2 cup  lowfat milk
0 3/4 cup  shredded gruyere cheese
0.3333 cup  Cheese, parmesan, fresh, grated
  1. Preheat broiler.
  2. Blend together flour and milk with a whisk in a medium sized saucepan.
  3. Set over medium heat and cook about 8 minutes,stir continuously, mixture will become thick. .
  4. Take off of heat and mix in cheese, continue to stir until fully melted.
  5. Stir together cheese sauce and nutmeg.
  6. Season fish with salt and pepper on both sides.
  7. Position fillets on a cooking spray coated baking sheet and place under broiler.
  8. Cook for 6 minutes.
  9. Take fillets out of oven and flip over.
  10. Spoon 3 tablespoons of cheese sauce on each fillet and season with paprika.
  11. Place back under broiler and cook for 2 minutes, fillets should be slightly browned.
