2 tbsp  olive oil
1 1/2 cup  fresh chopped onion
1 each  medium garlic cloves
2 each  medium carrots
2 cup  fresh mushroom slices
0 3/4 cup  long grain brown rice
2 cup  low fat unsalted chicken broth
0 1/4 cup  fresh chopped green onion
1 pinch  salt and pepper
  1. Put the olive oil in a skillet and heat, covered, over medium heat.
  2. Sauté the onions until they are soft, stirring frequently. Add in the garlic and carrots and cook for an additional 5 minutes. Then, add the mushrooms and rice and cook for approximately 7 to 8 minutes.
  3. Pour in the chicken broth and bring to a boil. Reduce the heat, cover, and continue cooking for 45 to 50 minutes, or until all the liquid is absorbed.
  4. Toss with the green onions and sprinkle with salt and pepper.
