0 1/4 cup  fresh chives
2 1/2 tbsp  extra virgin olive oil
1 cup  chopped parsley
0 1/2 cup  fresh cilantro
10 oz  plain yogurt
1 each  fresh lemon juice, per fruit
1 each  medium cucumber
24 oz  salmon fillet
1 pinch  salt and pepper
  1. Preheat broiler and broiler pan.
  2. In blender, purée chives and 1 tablespoon of olive oil. Transfer to small bowl and add cilantro, yogurt, lemon juice, and 1/2 cup chopped parsley.
  3. In separate bowl, toss remaining chopped parsley and cucumber slices.
  4. Spread herb sauce evenly on four plates and place cucumbers over the sauce.
  5. Rub 1 tablespoon of olive oil into salmon fillets and season with salt and pepper
  6. Remove pan from oven and spread remaining olive oil on it. Place fillets on pan and return to broiler positioning pan about 5" from heat.
  7. Cook until salmon is golden brown, or about 5 minutes. Turn over and cook another 2 to 3 minutes.
  8. Place one fillet, on each plate, on top of cucumbers and herb sauce.
