Ingredients Directions
  1. Cut chicken into 3/4 inch pieces.
  2. In a 3 1/2 to 4 1/2 quart slow cooker combine chicken, chicken broth, carrots, onion, ginger, garlic, lemon peel, and crushed red pepper.
  3. Cover and cook on low heat setting for 5 to 6 hours or on high heat setting for 2 1/2 to 3 hours.
  4. Skim off fat. Stir coconut milk, sweet peppers, mushrooms and cilantro into mixture in cooker.
  5. Cover and let stand for 5 to 10 minutes.
  6. Sprinkle each serving with peanuts (optional).
