1 1/4 cup  plain nonfat yogurt
8 oz  fresh spinach leaves
2 each  medium garlic cloves
0 1/2 cup  chopped walnuts
2 tbsp  olive oil
0 1/4 cup  reduced fat grated parmesan cheese
3 tbsp  fresh lemon juice
0 1/4 tsp  ground nutmeg
1 tbsp  fresh chives
  1. Line a colander with 3 layers of cheesecloth or paper coffee filters and place over a bowl.
  2. Add yogurt, cover, and refrigerate 4-6 hours, allowing yogurt to drain. This will make a cup of a yogurt cheese. Set aside 2 tablespoons for this recipe and place the rest in a covered container in the refrigerator for use in another recipe.
  3. Place 2 tablespoons of the yogurt cheese along with all of the other ingredients in a blender. Process until well blended, stopping occasionally to scrape the sides of the container.
  4. Refrigerate until ready to use, then bring to room temperature and stir.
