2 cup  white all purpose flour
0 1/2 cup  sugar
1 tsp  low sodium baking powder
0 1/2 tsp  baking soda
0 1/4 tsp  salt
0 1/2 tsp  ground cinnamon
1 cup  seedless raisins
2 each  egg whites
1 1/4 cup  unsweetened applesauce
Directions
  1. Preheat oven to 350 degrees F.
  2. Lightly spray a 9 x 5 inch loaf pan with nonstick cooking spray.
  3. Mix the flour, sugar, baking powder, baking soda, salt, and cinnamon in a large bowl, add raisins.
  4. In a separate bowl mix the egg whites and applesauce with an electric mixer, until well mixed.
  5. Pour egg mixture over the dry ingredients and mix to combine.
  6. Spoon into loaf pan and bake until toothpick inserted into the center comes out clean, about 70-80 minutes.
  7. Remove from oven and cool pan for 10 minutes, then remove bread from loaf pan and cool completely on a rack.
