1 1/2 cup  whole wheat flour
1 1/2 cup  white all purpose flour
1 cup  sugar
0 1/2 cup  chopped pecans
1 tsp  ground cinnamon
1 tsp  baking soda
0 1/4 tsp  low sodium baking powder
6 each  egg whites
1 cup  unsweetened applesauce
0 1/2 cup  low fat buttermilk
2 1/2 cup  chopped zucchini
1 each  cooking spray
  1. Preheat oven to 350 degrees F. Coat 2 pans, 9 X 5 inches or 8 X 5 inches, with nonstick cooking spray.
  2. Mix the baking powder, baking soda, sugar, pecans, cinnamon, all purpose flour, and whole-wheat flour.
  3. In a separate bowl, mix together the egg whites, applesauce, buttermilk, and zucchini.
  4. Combine the egg mixture with the flour mixture.
  5. Pour batter into prepared pans and bake for 45 minutes to one hour.
