0 1/2 cup  fresh chopped onion
0 1/2 cup  fresh chopped celery
0 1/2 cup  sliced carrots
1 each  cooking spray
1 cup  Yuca, fresh
0 1/2 cup  chopped tomato
0 1/2 cup  chopped zucchini
1 each  bay leaves
0 1/2 tsp  ground thyme
0 1/2 tsp  oregano leaves
2 cup  low sodium chicken broth
0.125 tsp  white pepper
  1. Coat a large saucepan with cooking spray. Add onions, celery, and carrots and cook 5 to 7 minutes, stirring occasionally.
  2. Add yucca, tomatoes, zucchini, bay leaf, thyme, oregano, chicken broth, and white pepper. Mix well.
  3. Bring soup to boil, then cook, covered, 20 minutes.
  4. Remove bay leaf and discard. Serve immediately.
