1 cup  white all purpose flour
1 cup  whole wheat flour
2 1/2 tsp  low sodium baking powder
0 1/4 tsp  baking soda
0 1/4 tsp  salt
2 tbsp  unsalted butter
0 1/2 cup  low fat buttermilk
0.6667 cup  mashed sweet potatoes
1 each  cooking spray
  1. Preheat oven to 425 degrees F.
  2. Mix the baking powder, baking soda, salt, all purpose flour, and wheat flour. Cut in the butter until the mixture is coarse.
  3. In a separate bowl, mix the buttermilk and mashed sweet potatoes. Combine the flour mixture with the potato mixture and stir well.
  4. Place the dough on a floured surface. Knead 3 times or until smooth. Roll the dough until it is 1/2 inch thick. Cut out 12 pieces using a biscuit cutter.
  5. Spray a baking sheet with the nonstick cooking spray.
  6. Place the biscuit rounds on the baking sheet and bake for 12 minutes, or until golden brown.
