2 tbsp  fresh lime juice
2 each  fresh avocado
1 each  medium apples
2 each  medium peaches
5 each  fresh green onions
3 cup  fresh mushroom slices
2 each  medium celery stalk
6 oz  medium cucumber
2 each  medium tomatoes
0.3333 cup  unsalted cashews
3 tbsp  caraway seeds
2 tbsp  vegetable oil
1 tbsp  sesame oil
1 tbsp  raspberry vinegar
1 tsp  salt
1/4 tsp  ground cayenne (red pepper)
Directions
  1. Core, peel and cut avocado into 1" pieces. Core and chop apples. Core and cut peaches into 1" pieces. Place in large mixing bowl, add lime juice. Fold gently to mix.
  2. Remove root end and 1" of green top of green onion. Wash and slice into 1/4” pieces.
  3. Remove strings from celery. Quarter lengthwise and chop into 1/2" pieces.
  4. Peel and quarter cucumbers. Cut into 1/2" pieces.
  5. Chop tomato.
  6. Fold in green onions, mushrooms, celery, cucumber, tomato, and cashews.
  7. In separate small bowl, whisk caraway seeds, vegetable oil, sesame oil, vinegar, salt, and cayenne pepper.
  8. Add 1/2 of dressing and gently fold.
  9. Add remaining dressing and gently fold 5 or 6 more times.
