3 each  medium pears
3 tbsp  fresh lemon juice
3 tbsp  apple juice
1 tbsp  fresh chives
0 1/2 oz  plain yogurt
6 oz  Greens, Belgian endive, fresh
2 oz  crumbled gorgonzola cheese
  1. To prepare dressing, peel and core half of one pear and puree in blender with 2 tablespoons lemon juice, apple juice, chives and yogurt. Set aside.
  2. Slice remaining pears into halves, stem and core, but do not peel.
  3. Slice pears lengthwise into 1/4 inch thick slices and toss with 1 tablespoon lemon juice.
  4. Line serving platter with endive leaves and arrange pear slices on top.
  5. Drizzle with dressing, crumble cheese over salad and serve.
