4 tbsp  fresh lemon juice
1 quart  cold water
2 each  medium apples
0.3333 cup  orange juice
.33 cup  fresh mint
1 each  mint sprigs
  1. In large serving bowl, mix lemon juice and water. Cut apples into thin slivers. Soak apple slivers in lemon water 5 minutes.
  2. Drain apples in colander. Place apples back in bowl. Add orange juice. Toss to mix.
  3. Chop mint. Add to salad and gently toss. Garnish with mint sprig.
