8 oz  low fat cream cheese
1 cup  shredded cheddar cheese
0 1/4 cup  fresh chopped onion
1 oz  seedless raisins
1 tsp  fresh ginger root
1 each  medium garlic cloves
0 1/2 cup  mango chutney
0 1/2 tsp  curry powder
2 tbsp  unsalted cashews
1 each  fresh green onions
  1. Peel and mince ginger root and garlic. Cut green onion into thin slices and refrigerate.
  2. In medium mixing bowl, using wooden spoon, gently combine cheeses, onions, raisins, ginger, garlic, curry powder, and 2 tablespoons mango chutney until well blended. Refrigerate 1 - 2 hours.
  3. Preheat oven to 350°F.
  4. On baking sheet, spread cashews evenly and bake 10 minutes.
  5. Transfer spread to serving plate and garnish with cashews, green onions and remaining chutney.
