1 each  medium apples
4 cup  tap water
3 tbsp  fresh lemon juice
3 tbsp  fresh lime juice
2 each  medium shallots
1 1/2 tbsp  fresh cilantro
0 1/2 oz  fresh mint
2 tsp  fish sauce
2 each  medium garlic cloves
0 1/4 tsp  hot red pepper flakes
2 each  scallions
1 lb  raw medium shrimp
2 each  head Boston lettuce
1 oz  fresh peppermint
Directions
  1. In large mixing bowl, toss apple slivers with lemon and lime juices, shallots, cilantro, mint, fish (or soy) sauce, garlic, pepper flakes, and scallions. Set aside.
  2. In medium pan, bring water to a boil. Add shrimp and cook 1 minute, or until shrimp is pink in color. Drain and add to apple mixture.
  3. Toss gently, cover and refrigerate at least 30 minutes.
  4. Serve on lettuce leaves and garnish with mint sprig.
