3 1/2 cup  fat free reduced sodium chicken broth
0 1/4 cup  quick cooking brown rice
2 each  medium garlic cloves
0 1/4 cup  fresh lemon juice
1 each  eggs
2 tbsp  chopped parsley
1 pinch  white pepper
1 pinch  salt
Directions
  1. In a medium size pot, bring chicken broth to a boil then add in the rice and garlic.
  2. Reduce heat, cover and simmer until rice is tender, about 20 minutes.
  3. In a small bowl, mix the lemon juice and egg then slowly stir into soup.
  4. Add in parsley, season to taste with salt and pepper (optional).
