1 each  cooking spray
1 tbsp  grated parmesan cheese, low sodium
2 cup  fat free milk
3 tbsp  white all purpose flour
1 tbsp  fresh chives
0 1/2 tsp  marjoram, leaves, ground
0 1/2 tsp  dry mustard
0 1/4 tsp  ground cayenne (red pepper)
1 pinch  ground nutmeg
3 each  raw egg yolks
0 1/4 cup  Cheese, cheddar, fat free, shredded
1 pinch  salt and pepper
3 each  egg whites
0 1/4 tsp  cream of tartar
  1. Preheat oven to 350 degrees F.
  2. Spray nonstick cooking spray in a 1 quart soufflé dish then sprinkle the parmesan cheese.
  3. Attach an aluminum foil collar to the dish; making sure the foil goes 3 inches above the top, then spray nonstick cooking spray to it.
  4. In a small a pot, mix the milk and flour until smooth then add in the chives, marjoram, mustard, cayenne, and nutmeg. Bring to a boil, whisking constantly.
  5. Continue whisking and boil until thick, about 1 minute.
  6. In a small bowl mix 1/2 cup of milk mixture with the egg yolks then whisk entire mixture back into pot.
  7. Add shredded cheese and cook over low heat until melted, whisking constantly.
  8. Add in salt and pepper if you choose.
  9. In a medium bowl, beat egg whites until foamy, then add in the cram of tartar and beat until stiff, but not dry.
  10. Add 1/3 of the egg white mixture into the cheese mixture on stove,
  11. Fold all of the cheese mixture into the bowl with the remaining egg whites.
  12. Spoon into soufflé bowl and bake until puffed and brown, about 35-40 minutes. Serve immediately.
