1 1/4 lb  medium zucchini
1 tbsp  fresh lemon juice
1 tbsp  extra virgin olive oil
0 1/2 tsp  salt
0 1/2 tsp  caraway seeds
0 1/2 tsp  ground coriander
0 1/2 tsp  hot pepper sauce
1 each  medium garlic cloves
0 1/4 cup  crumbled feta cheese
Directions
  1. Position zucchini in a large saucepan and cover with water. Make sure water is at least 1 inch above top of zucchini.
  2. Cook for 20 minutes after water comes to a boil. Do not overcook; zucchini should be tender, but not mushy.
  3. Drain zucchini in a colander. Keep zucchini in colander and smash with a fork. Drain well.
  4. Mix lemon juice, oil, salt, caraway, coriander, hot pepper sauce, and garlic in a bowl. Toss in zucchini and combine until all zucchini is coated. Scatter feta over top.
