1 tsp  vegetable oil
0 1/2 cup  fresh chopped onion
0 1/2 cup  fresh chopped celery
0 1/2 tsp  salt
1 1/2 tsp  fresh thyme
0 1/4 tsp  black pepper
2 tbsp  red wine
14 1/2 oz  canned unsalted diced tomatoes
6 oz  raw medium shrimp
6 oz  raw halibut fillets
  1. Heat oil over medium high heat until hot.
  2. Add in the onion, celery, salt, thyme, and pepper, cook 5 minutes.
  3. Add in the wine and tomatoes and bring to a boil.
  4. Lower heat and simmer, uncovered for 5 minutes.
  5. Add in the shrimp and halibut, cover and simmer another 5 minutes or until shrimp turns pink and halibut flakes easily with a fork. Serve immediately.
