1 each  cooking spray
2 1/2 cup  white all purpose flour
2 tbsp  sugar
2 tsp  low sodium baking powder
0 1/2 tsp  baking soda
0 1/2 tsp  dry mustard
1 pinch  ground cayenne (red pepper)
0 1/4 cup  canola oil
8 oz  Cheese, cheddar, sharp, reduced fat
1 cup  low fat buttermilk
1 each  medium eggs
1 cup  fresh baby spinach
0.6667 cup  chopped walnuts
Directions
  1. Preheat oven to 350 degrees F. Coat a 9x5x3-inch loaf pan with nonstick cooking spray.
  2. In a bowl, mix together the flour, sugar, baking powder, baking soda, dry mustard, and cayenne.
  3. Add the oil, and work together with a pastry blender or fingertips. Stir in the shredded cheese.
  4. In a small bowl, blend together the buttermilk and egg; stir into the flour mixture just until moistened.
  5. Mix in the spinach and walnuts. Transfer to the prepared loaf pan.
  6. Bake for 40 minutes, or until the top is lightly browned. Serve warm or at room temperature.
