Ingredients Directions
  1. In a pot over medium high heat bring the chicken broth, potato, frozen onion, salt, and pepper to a boil.
  2. Reduce heat and simmer, uncovered for 20 minutes.
  3. In a small bowl mix together the flour and milk, stirring until smooth. Add to potato mixture and cook over medium heat until thick, about 5 minutes, stir constantly.
  4. Take 1/2 the mixture and put into a blender, cover and process until smooth. Pour into a large bowl and repeat with the remaining 1/2 of the potato mixture.
  5. Return all of the blended potato mixture to the pot over medium heat, add cheese and stir until melted.
  6. Serve and sprinkle with green onions on top.
