4 lb  turkey thighs
0 1/2 tsp  salt
0 1/2 tsp  black pepper
0 3/4 cup  fresh chopped onion
0 1/2 cup  cranberry juice
2 tbsp  dijon mustard
0 1/4 tsp  ground cayenne (red pepper)
2 tbsp  cornstarch
2 tbsp  cold water
Directions
  1. In 4 to 5 quart slow cooker, place turkey. Sprinkle turkey with salt (or salt substitute) and black pepper. Top with onion.
  2. In small bowl, whisk cranberry juice, mustard, and cayenne pepper. Pour over turkey.
  3. Cover and cook on low heat setting for 5 to 6 hours or on high heat setting for 2-1/2 to 3 hours.
  4. Transfer turkey to serving platter; cover turkey with foil to keep warm. Reserve cooking liquid in slow cooker.
  5. If using low heat setting, turn to high heat setting.
  6. In small bowl combine cornstarch and water. Stir into liquid in cooker.
  7. Cover and cook for 15 additional minutes or until thickened. Spoon sauce over turkey. Serve.
