1 tbsp  vegetable oil
1 each  medium onions
0 1/2 cup  fresh chopped celery
1 lb  raw medium shrimp
6 oz  fresh mushroom slices
0 1/2 tsp  minced garlic
1 cup  fresh chopped spinach
0 1/4 lb  fresh green peas
1 tsp  cornstarch
0 1/4 cup  cold water
2 tbsp  low sodium soy sauce
Directions
  1. Heat oil in a large skillet or wok on high heat for 2 minutes.
  2. When hot, add the onion and celery and stir-fry for 3 minutes.
  3. Add the shrimp, sliced mushrooms, and minced garlic, and continue to stir-fry for 1 minute or until the shrimp turn pink.
  4. Add the shredded spinach and peas and stir-fry for 30 more seconds.
  5. After combining the cornstarch, water, and reduced-sodium soy sauce, add it to the shrimp mixture. Continue to cook, stirring occasionally over medium-high heat, until the mixture thickens. Serve immediately.
