4 each  medium garlic cloves
0 1/4 cup  egg yolks
1 cup  extra virgin olive oil
2 tsp  fresh lemon juice
1 pinch  salt
1 pinch  black pepper
  1. In a medium bowl, beat eggs well with a wire whisk. Stir in garlic.
  2. Gradually add oil in a thin stream, beating constantly until light and creamy.
  3. Season with salt and pepper. Stir in lemon juice.
  4. Refrigerate until ready to use.
