Ingredients Directions
  1. Spray grill rack with nonstick cooking spray and heat grill to medium hot temperature.
  2. Place fish and fresh pineapple slices onto a baking dish.
  3. In a separate bowl mix all of the other ingredients and pour 1/2 of it over the fish and pineapples. Divide the remaining juice mixture in 1/2.
  4. Cover fish and place in refrigerator for 2 hours, turning occasionally.
  5. Remove the fish and pineapples from dish and throw that marinade out.
  6. Place the fish and pineapples on rack; cover and grill 5 minutes on each side, basting frequently with 1/2 the juice mixture.
  7. While fish is cooking take the remaining 1/2 of the marinade and pour through a strainer into a small pot, bring to a boil and serve over the fish and pineapples.
