2 each  eggs
1 cup  Flour, all purpose, white, unbleached, enriched
0 1/4 cup  ground flax seed
1 cup  fat free milk
1 tbsp  vegetable oil
0 1/4 tsp  salt
  1. Preheat oven to 475 degrees F.
  2. Beat eggs with flour, flaxseed meal, milk, oil, and salt until smooth.
  3. Grease muffin tin cups or custard cups and fill half of each cup with batter.
  4. Bake for 15 minutes, then lower heat to 350 degrees F for 20 minutes or until popovers are crispy and golden brown. Serve hot.
