1 tbsp  vegetable oil
1 each  medium onions
1 each  medium garlic cloves
4 each  boneless skinless chicken breasts
3 each  small apples
3 tbsp  dried currants
1 1/2 oz  pine nuts
0.3333 cup  Juice, apple
1 1/2 tsp  ground thyme
1 1/2 tsp  chopped parsley
1 each  whole jalapeno pepper
1 pinch  salt and pepper
  1. Heat oil in a large heavy skillet over medium heat.
  2. Saute onions and garlic until tender.
  3. Move the onions off to the side, and brown chicken breasts 4 minutes on each side.
  4. Top chicken with apples, currants and pine nuts.
  5. Pour in the apple juice, then season with thyme, parsley, jalapeno, salt and pepper.
  6. Reduce heat. Cover and simmer for 15 to 20 minutes, or until apples are cooked and chicken is no longer pink.
