2 cup  white all purpose flour
0.6667 cup  Bran, wheat
0 1/4 cup  Cocoa Powder, unsweetened
1 tsp  low sodium baking powder
1 tsp  baking soda
1 tsp  salt
1 each  eggs
1 each  egg whites
1 cup  low fat buttermilk
0 1/4 cup  vegetable oil
1 tsp  vanilla extract
2 each  medium bananas
0.3333 cup  packed brown sugar
0 1/2 cup  Baking Chips, peanut butter, Reese's
  1. Preheat oven to 425 degrees F.
  2. Mix the flour, bran, cocoa, baking powder, baking soda, and salt in a large bowl.
  3. Make a well in the center of the mixture.
  4. In a separate bowl, mix together the egg, egg white, buttermilk, oil, and vanilla until blended.
  5. Add the bananas and brown sugar to the egg mixture.
  6. Pour the wet ingredients into the well of the dry ingredients and mix until blended.
  7. Add in the peanut butter chips and mix.
  8. Pour into paper-lined muffin cups and bake until firm, about 17 minutes.
  9. Let cool in pan for about 10 minutes then transfer to a cooling rack until completely cooled.
