7 1/2 oz  Fish, salmon, sockeye, red, canned
1 each  Eggs, large, raw
0 1/4 cup  bread crumbs
2 tbsp  light mayonnaise
0 1/4 tsp  salt
0 1/4 tsp  black pepper
0 1/4 tsp  fresh lemon juice
2 tsp  vegetable oil
  1. Open can of salmon, drain, and put into a small bowl.
  2. Mash up the salmon with a fork, including the skin and bones.
  3. Mix in the egg, bread crumbs, mayonnaise, salt, pepper, and lemon juice.
  4. Form mixture into 8 patties, about 1/2 inch thick each.
  5. Place patties on a plate, cover with wax paper, and put in the refrigerator for at least 30 minutes (6 hours maximum).
  6. When ready to cook, heat 2 teaspoons of oil in a large nonstick pan.
  7. Cook patties until golden brown, about 8-10 minutes. Flip and cook the other side the same way.
