1 cup  bread crumbs
0 1/2 cup  dry roasted unsalted peanuts
1 tsp  dried parsley
0 1/2 tsp  salt
0 1/2 tsp  black pepper
3 tbsp  light mayonnaise
1 tsp  fresh lime juice
1 1/2 lb  sole fillet
Directions
  1. In a blender or food processor, mix together the bread crumbs, peanuts, parsley, salt, and pepper until chopped very fine.
  2. Place mixture into a shallow dish.
  3. In a separate shallow dish, mix the mayonnaise and lime juice.
  4. Dip the fish 1 piece at a time, first into the mayonnaise mixture and then into the bread crumb mixture. Be sure to coat both sides.
  5. Bake for 6 minutes, turn fish and bake until fish is opaque and flakes easily, about 4 minutes or more.
