3 cup  baby carrots
1 tbsp  walnut oil
0 1/4 cup  brandy
2 tbsp  honey
1 tsp  ground cinnamon
  1. Preheat oven to 400°F.
  2. Tear large sheet of aluminum foil. Place carrots on foil and sprinkle with walnut oil, cognac, honey, and cinnamon.
  3. Wrap carrots tightly in foil. Place in baking dish or baking tray. Roast 25 to 35 minutes until carrots are tender, yet crisp.
