3 cup  baby carrots
1 tbsp  walnut oil
0 1/4 cup  brandy
2 oz  honey
1 tsp  ground cinnamon
Directions
  1. Preheat oven to 400°F.
  2. Tear large sheet of aluminum foil. Place carrots on foil and sprinkle with walnut oil, cognac, honey, and cinnamon.
  3. Wrap carrots tightly in foil. Place in oven and roast 25 to 35 minutes until carrots are tender, yet crisp.
