2 1/2 cup  cooked chicken breast, diced
1 cup  Grapes, Thompson seedless, fresh
0 1/2 cup  canned pineapple chunks, drained
0 1/4 cup  fresh chopped celery
2 tbsp  plain nonfat yogurt
2 tbsp  light mayonnaise
0 1/2 tsp  salt
1 1/2 cup  Chow Mein Noodles, dry
0 1/2 cup  grated carrots
2 tbsp  chopped parsley
  1. Mix together the chicken, pineapple, grapes, and celery in a medium bowl.
  2. In a separate bowl, mix the yogurt, mayonnaise, and salt.
  3. Add yogurt mixture to the chicken mixture, mix, and refrigerate for 1 hour.
  4. Right before you are about to serve mix together the chow mein noodles and carrots.
  5. Divide noodles into 4 even servings on 4 plates to create the nest.
  6. Divide the chicken mixture into 4 even servings and place on top of the nests.
  7. Sprinkle with the chives or parsley.
