2 cup  shredded carrots
2 tbsp  chopped parsley
1 tbsp  fresh lemon juice
1 tbsp  white wine vinegar
1 tbsp  vegetable oil
1 tsp  sugar
0 1/2 tsp  dijon mustard
0 1/4 tsp  salt
0 1/4 tsp  black pepper
  1. Mix the carrots and parsley together in a medium bowl and set aside.
  2. In a separate bowl mix together the remaining ingredients.
  3. Pour over carrots and parsley, mix thoroughly.
  4. Cover and refrigerate for a minimum of 1 hour, no more than 8 hours.
