Ingredients Directions
  1. In a gallon size ziplock bag prepare the marinade by adding in the cilantro, vinegar, soy sauce, ginger, and garlic.
  2. Add the chicken, seal the bag, squeeze out the air, and shake to mix all the chicken.
  3. Marinate in refrigerator for 30 minutes.
  4. Preheat oven to 350 degrees F. Spray nonstick cooking spray in to a 10 inch x 6 inch pan.
  5. Place the chicken and all of the marinade into the baking pan and add the potatoes.
  6. Cover and bake 15 minutes. Uncover and bake another 15 minutes until the potatoes are soft and chicken is cooked thoroughly.
  7. Serve and top with any remaining juice from the pan.
