0.6667 cup  orange juice
3 tbsp  Peanut Butter, creamy, unsalted
3 tbsp  low sodium soy sauce
1 tbsp  packed light brown sugar
1 1/2 tsp  ground ginger
2 tsp  minced garlic
1 1/4 lb  boneless skinless chicken breasts
8 each  scallions
2 each  medium red bell peppers
1 each  cooking spray
  1. Rinse chicken in cool water and pat dry.
  2. Cut chicken into thin, 1/4" strips and place in a 9" x 9" glass baking dish.
  3. In blender, combine orange juice, peanut butter, soy sauce, brown sugar, ginger, and garlic. Blend until smooth.
  4. Reserve 1/3 cup of marinade. Cover and refrigerate.
  5. Pour the remaining marinade over chicken strips. Toss to mix.
  6. Cover and refrigerate for 6-24 hours.
  7. Soak wooden skewers in water for 20 minutes.
  8. Preheat broiler.
  9. Skewer strip of chicken, 2 scallion pieces, and 2 bell pepper pieces onto each wooden skewer.
  10. Spray large broiler pan with cooking spray. Arrange skewers on pan.
  11. Remove reserved marinade from refrigerator.
  12. Broil skewers for 5 minutes until the chicken is browned, turning occasionally.
  13. Baste with the refrigerated marinade, cook for another 3 minutes.
  14. Serve hot.
