3 cup  wheat, bulgur, dry
1 each  Cucumber, with o skin, fresh, large, 8 1/4" long
4 each  fresh plum tomatoes
0 1/2 cup  fresh chopped red onion
0 1/2 cup  chopped parsley
0 1/2 cup  reduced fat feta crumbles
0.3333 cup  canned black olives
3 tbsp  fresh lemon juice
2 tbsp  extra virgin olive oil
0 1/4 tsp  salt
0 1/4 tsp  black pepper
  1. Toss the bulgur wheat, cucumber, tomatoes, onions, parsley, feta cheese, and olives in a large bowl. Mix well.
  2. Stir together the dressing ingredients in a small bowl.
  3. Pour the dressing over the salad and toss to mix.
  4. Cover and chill for a minimum of 2 hours prior to serving.
