1 cup  orzo pasta
8 oz  cooked shrimp
0 1/4 cup  chopped scallions
0 1/4 cup  fresh chopped celery
1 1/2 tbsp  fresh dill weed
0 1/2 cup  light mayonnaise
2 tsp  fresh lemon juice
1 pinch  white pepper
  1. Cook the orzo according to the package directions. Drain, rinse under cool water, and drain again.
  2. Add the orzo to a large bowl, along with the shrimp, scallions, celery, and dill. Toss to mix.
  3. Stir the dressing ingredients together in a small bowl.
  4. Toss the dressing mixture with the orzo mixture, mixing well.
  5. Cover and refrigerate for a minimum of 2 hours prior to serving. If the mixture seems too dry, stir in a little more mayonnaise.
  6. If desired, serve on a bed of mixed salad greens.
