  1. Bring the tomatoes, tomato sauce, onion, chili powder, garlic, cumin, and oregano to a boil over medium high heat in a 3-quart pot.
  2. Reduce the heat to low, cover, and simmer for 12 minutes.
  3. Add the beans, corn, and zucchini and raise the heat to bring to a boil.
  4. Reduce the heat to low, cover, and simmer for 10 minutes until the vegetables are tender and the flavors are well blended.
  5. Top each serving with 2 tablespoons of the cheese. Serve hot.
