2 tsp  Margarine, 80% fat, unsalted
1 each  medium onions
14 floz  low sodium vegetable broth
10 oz  frozen green peas
1 each  head Boston lettuce
0 3/4 tsp  salt
0.125 tsp  black pepper
0.125 tsp  ground thyme
1 cup  cold water
0 1/2 cup  fat free milk
1 tbsp  fresh lemon juice
Directions
  1. Using a 4-quart saucepan, melt butter over medium heat. Add onion and cook, stirring occasionally, until tender, approximately 5 minutes.
  2. Stir in broth, frozen peas, lettuce, salt, pepper, thyme, and water. Heat to boiling over high heat. Reduce heat to low; simmer 5 minutes. Stir in milk.
  3. Spoon half of pea mixture into blender, cover, with center part of cover removed to let steam escape, and puree until smooth. Pour soup into large bowl. Repeat with reamining mixture.
  4. Return soup to same saucepan, heat through. Stir in lemon juice and remove from heat. Transfer soup to serving bowl.
