Ingredients Directions
  1. Prepare the chocolate cake using the package directions for two 9-inch round cakes, substituting the water and coffee for the liquid, the egg substitute for whole eggs, and the applesauce for oil, adding 1 teaspoon cinnamon before mixing.
  2. Whisk together the whipped topping, instant espresso powder, and 1/2 teaspoon cinnamon in a medium bowl; set aside.
  3. Cut one cake layer in half horizontally using a sharp knife then remove and set aside the top half to the cake using a large spatula or dinner-size plate. Place the bottom half on a serving plate.
  4. Spread one quarter of the whipped topping mixture on the bottom half then place the top half on the bottom half.
  5. Spread one quarter of the whipped topping mixture on the top half then repeat with the remaining cake layer, stacking the halves. (There will be four layers of cake and four layers of whipped topping mixture).
  6. Sprinkle the cake with the cocoa powder.
