1 3/4 lb  cooked baby red potatoes
1 cup  soy milk
2 tbsp  canola oil
1 1/4 tsp  salt
Directions
  1. Steam potatoes over simmering water until tender (about 15 minutes).
  2. Transfer potatoes to medium bowl. Add soy milk or oat milk, oil and salt, and mash until smooth.
  3. Serve immediately.
