1 each  medium shallots
3 each  medium garlic cloves
2 cup  cooked white beans
1 tbsp  fresh lemon juice
0 1/2 tsp  dried basil
0 1/2 tsp  ground thyme
0 1/2 tsp  dried dill weed
0 1/2 tsp  ground tarragon
0 1/2 tsp  white pepper
0 1/4 tsp  ground nutmeg
0 1/2 tsp  salt
1 tbsp  capers
1 tsp  stoneground mustard
1 tbsp  tahini
2 tbsp  chopped parsley
1 tbsp  fresh tarragon
1 pinch  hot pepper sauce
2 cup  fresh watercress, chopped
  1. Place shallots, and garlic in a food processor or blender; process a few seconds.
  2. Add all remaining ingredients (except those that are optional) and puree until smooth. Taste and add optional ingredients as desired; puree until smooth.
  3. Transfer to a serving dish or decorative crock and garnish.
