Blueberry-Orange Sauce
0 1/4 cup  SPLENDA┬« No Calorie Sweetener, granulated
1 1/2 tsp  cornstarch
2 tbsp  orange juice
0 1/4 tsp  grated orange peel
2 cup  Blueberries, fresh
1 each  cooking spray

2 cup  Pancake & Waffle Mix, original, dry
1 cup  Milk, nonfat/skim, with add vitamin A & D, lactose free
0 1/2 cup  liquid egg substitute
1 tsp  grated orange peel
0 1/4 tsp  ground nutmeg
1 cup  Blueberries, fresh
  1. Mix sugar substitute and cornstarch in 1 1/2 quart saucepan.
  2. Stir in 2 cups blueberries, orange juice, and 1/4 teaspoon orange peel. Boil over medium heat while stirring constantly.
  3. Boil approximately 2 minutes or until thickened.
  4. Grease griddle with canola oil or cooking spray and place over medium heat or to 375 degrees F.
  5. Place all pancake ingredients except the blueberries in medium bowl and mix. Fold in 1 cup blueberries.
  6. Pour slightly under 1/4 cup batter onto griddle for each pancake and cook until edges are dry. Flip over and cook opposite side until golden brown.
  7. Serve with orange blueberry sauce.
