10 each  medium apples
1 cup  apple cider
2 each  cinnamon sticks
1 1/2 tsp  fresh lemon peel
0 1/4 cup  packed light brown sugar
0 1/4 tsp  ground nutmeg
1 1/2 tbsp  fresh ginger root
Directions
  1. Peel, core and chop apples. Transfer to a large saucepan and add cider, cinnamon, and lemon zest.
  2. Simmer over medium heat 30 minutes, stirring occasionally. Remove cinnamon sticks. Add sugar, nutmeg, and ginger, and cook until thick, about 10 minutes.
  3. Serve warm or chilled.
