1 each  medium lemons
2 cup  red wine
2 cup  cold water
1 1/4 cup  sugar
1 tbsp  black peppercorns
6 each  whole cloves
1 each  cinnamon sticks
4 each  medium pears
4 each  medium apples
2 cup  fresh cranberries
  1. Use a vegetable peeler, and remove 1 inch wide continuous strips of peel from lemon.
  2. In a 4 quart saucepan combine the lemon peel, wine, water, sugar, peppercorns, cloves, and cinnamon stick. Heat to boiling over high heat, stirring frequently, until sugar dissolves.
  3. Reduce heat to medium low, cover and simmer, stirring occasionally about 10 minutes.
  4. Pour syrup through sieve set over bowl and discard peppercorns and cloves. Return syrup, lemon peel and cinnamon stick to saucepan.
  5. Add pears and apples to syrup, gently stirring to combine, heat to boiling over medium high heat.
  6. Reduce heat to medium low, cover and simmer until apples and pears are tender about 5 minutes. Stir in cranberries and cook, covered, 5 minutes longer.
  7. Pour fruit mixture into heat safe bowl and refrigerate at least 4 hours to blend flavors.
  8. Remove lemon peel and cinnamon stick before serving.
