0 3/4 cup  cold water
0 3/4 cup  sugar
1 pinch  salt
4 each  Nectarines, medium, fresh
3 tbsp  fresh lime juice
  1. In 2 quart saucepan, heat water, sugar, and salt to boiling over high heat; stir until sugar dissolves.
  2. Reduce heat to medium and cook 3 minutes. Remove saucepan from heat; cool sugar syrup to room temperature.
  3. In a food processor with knife blade attached, or in a blender, puree unpeeled nectarines with sugar syrup until smooth.
  4. Pour into large bowl; stir in lime juice. Cover and refrigerate until well chilled, about 2 hours.
  5. Pour nectarine mixture into ice cream maker and freeze as manufacturer directs. Serve sorbet immediately or store in freezer for up to 2 weeks.
